- 1 cup fresh blueberries
Instructions
- Preheat your oven to 325°F (160°C). Grease a 9×9-inch baking pan.
- In a mixing bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Press the mixture into the bottom of the pan to create the crust. Bake for 10 minutes and allow it to cool.
- In a large bowl, beat cream cheese and sugar until smooth and creamy. Add eggs, lemon zest, and lemon juice. Mix until combined, but avoid overmixing.
- Gently fold in fresh blueberries. Pour the cheesecake mixture over the cooled crust. Spread evenly.
- Bake for 30-35 minutes until the center is slightly jiggly. Turn off the oven and leave the door slightly open for 1 hour to cool gradually.
- Cool completely at room temperature, then refrigerate for at least 4 hours or overnight. Slice into bars and serve chilled.
