Description

  • 4 cups heavy whipping cream, divided
  • 2 cups milk
  • 2 (3.4 ounce) packages instant lemon pudding mix
  • 2 tablespoons lemon juice
  • 3/4 cup confectioners’ sugar
  • A dash of vanilla extract
  • 1 (9-inch) angel food cake, cubed
  • 3 cups sliced fresh strawberries
  • 2 cups fresh blueberries

Instructions

  1. In a large mixing bowl, whisk together 2 cups of heavy whipping cream, milk, lemon pudding mix, and lemon juice until smooth. Cover and refrigerate for 1 hour.
  2. In a separate bowl, beat the remaining 2 cups of heavy whipping cream until foamy. Gradually add confectioners’ sugar and vanilla extract, and beat until stiff peaks form.
  3. In a trifle bowl, layer half of the cubed angel food cake.
  4. Spoon half of the lemon pudding mixture over the cake and spread evenly.
  5. Add half of the strawberries and blueberries on top of the pudding.
  6. Spread half of the whipped cream over the berries.
  7. Repeat the layers with the remaining cake, pudding, berries, and whipped cream.
  8. Cover the trifle and refrigerate for at least 1 hour before serving.
