- 2 large eggs
- 1/4 cup fresh lemon juice (about 2 lemons)
- 1 tablespoon lemon zest
- 1/4 cup all-purpose flour
- Powdered sugar for dusting (optional)
Instructions
- Preheat the oven to 350°F (175°C). In a medium bowl, combine flour, sugar, and salt. Cut in softened butter until mixture resembles coarse crumbs. Press into the bottom of a greased 8×8-inch pan. Bake for 15-20 minutes, until golden. Remove from oven and cool slightly.
- In a separate bowl, whisk together sugar, eggs, lemon juice, lemon zest, and flour. Pour the lemon mixture over the baked crust.
- Bake for another 20-25 minutes, until the filling is set but slightly jiggly in the center. The edges should be golden.
- Allow the bars to cool at room temperature for 30 minutes, then refrigerate for at least 2 hours to set. Dust with powdered sugar before serving.
