Ingredients

  • Fresh sea bass: 1 whole fish (about 1.5 to 2 lbs)
  • Lemon: 1 large, sliced into rounds
  • Fresh thyme: 4-5 sprigs
  • Olive oil: 3 tablespoons
  • Garlic: 3 cloves, minced
  • Salt: 1 teaspoon
  • Black pepper: 1/2 teaspoon

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse the sea bass under cold water and pat it dry with paper towels.
  3. Drizzle 2 tablespoons of olive oil over the fish and rub it into the skin and cavity.
  4. Sprinkle salt and black pepper generously inside and out.
  5. Stuff the cavity with minced garlic and fresh thyme sprigs.
  6. Lay lemon slices on top of the fish and inside the cavity.
  7. Place the fish on a baking sheet lined with parchment paper and drizzle the remaining tablespoon of olive oil over the lemon slices.
  8. Roast the fish in the preheated oven for about 25-30 minutes until the skin is crispy and golden brown.
  9. Check the internal temperature of the fish; it should reach 145°F (63°C).
  10. Let the fish rest for a few minutes before transferring it to a serving platter and garnishing with fresh thyme and lemon wedges.
