Ingredients
- Fresh sea bass: 1 whole fish (about 1.5 to 2 lbs)
- Lemon: 1 large, sliced into rounds

- Salt: 1 teaspoon
- Black pepper: 1/2 teaspoon
Instructions
- Preheat your oven to 400°F (200°C).
- Rinse the sea bass under cold water and pat it dry with paper towels.
- Drizzle 2 tablespoons of olive oil over the fish and rub it into the skin and cavity.
- Sprinkle salt and black pepper generously inside and out.
- Stuff the cavity with minced garlic and fresh thyme sprigs.

- Roast the fish in the preheated oven for about 25-30 minutes until the skin is crispy and golden brown.
- Check the internal temperature of the fish; it should reach 145°F (63°C).
- Let the fish rest for a few minutes before transferring it to a serving platter and garnishing with fresh thyme and lemon wedges.
