Ingredients
- Corn tortillas: 8 to 10
- Shredded cooked chicken: 2 cups
- Enchilada sauce: 2 cups
- Black beans: 1 can (15 oz), drained and rinsed
- Shredded cheese: 2 cups
- Sour cream: 1 cup, for serving
- Fresh cilantro: 1/4 cup, chopped
- Olive oil: 1 tablespoon
- Salt and pepper: to taste
Instructions
- Gather your ingredients.
- Prepare the filling by combining shredded chicken, black beans, and one cup of enchilada sauce in a bowl. Season with salt and pepper.
- Assemble the enchiladas by placing the filling in corn tortillas and rolling them up.
- Place the rolled tortillas in a greased baking dish, pour the remaining enchilada sauce over them, and sprinkle with cheese.
- Bake in a preheated oven at 350°F (175°C) for 20-25 minutes until the cheese is melted and bubbly.
- Let cool for a few minutes before serving.
