Description

Ingredients

  • Corn tortillas: 8 to 10
  • Shredded cooked chicken: 2 cups
  • Enchilada sauce: 2 cups
  • Black beans: 1 can (15 oz), drained and rinsed
  • Shredded cheese: 2 cups
  • Sour cream: 1 cup, for serving
  • Fresh cilantro: 1/4 cup, chopped
  • Olive oil: 1 tablespoon
  • Salt and pepper: to taste

Instructions

  1. Gather your ingredients.
  2. Prepare the filling by combining shredded chicken, black beans, and one cup of enchilada sauce in a bowl. Season with salt and pepper.
  3. Assemble the enchiladas by placing the filling in corn tortillas and rolling them up.
  4. Place the rolled tortillas in a greased baking dish, pour the remaining enchilada sauce over them, and sprinkle with cheese.
  5. Bake in a preheated oven at 350°F (175°C) for 20-25 minutes until the cheese is melted and bubbly.
