Instructions
- Place 15 chocolate chip cookies in a large resealable bag and crush into fine crumbs with a rolling pin. Reserve a small amount of crumbs for decoration.
- Transfer most crumbs into a large liquid measuring cup, pour 3 cups heavy cream over, stir gently, and let sit 10 minutes to infuse flavor.
- Strain the cream mixture through a fine strainer into a large bowl, discarding the cookie bits.
- In a separate large bowl, beat softened cream cheese with an electric mixer until fluffy, about 1 minute.
- Add powdered sugar and beat until smooth and combined.
- Gradually add the strained cookie-infused cream to the cream cheese mixture, beating until soft peaks form.
- Spread a thin layer of whipped cream mixture on a serving plate to form the base.
- Arrange 8 cookies in a circle and 3 in the center on top of the cream layer.
- Spread another layer of whipped cream over the cookies.
- Continue layering cookies and cream, offsetting cookie placement on each layer, until 6 layers are formed, finishing with a cream layer.
- Sprinkle reserved crushed cookies on top for decoration.
- Wrap loosely with plastic wrap and refrigerate for about 6 hours to chill and set.
