Description

Ingredients

  • Chicken thighs: 1.5 lbs (about 680 grams)
  • Soy sauce: 1/2 cup (120 ml)
  • Garlic: 4 cloves, minced
  • Ginger: 1 tablespoon, grated
  • Sesame oil: 2 tablespoons
  • Brown sugar: 2 tablespoons
  • Green onions: 4, chopped (for garnish)
  • Gochujang: 2 tablespoons
  • Water: 1 cup (240 ml)
  • Salt and pepper: to taste

Instructions

  1. Marinate the chicken by combining soy sauce, garlic, ginger, sesame oil, brown sugar, and gochujang in a bowl. Coat the chicken thighs and refrigerate for at least 30 minutes.
  2. In a skillet, heat oil and sear the chicken thighs skin-side down for 5-7 minutes until golden brown, then flip and sear the other side for 3-4 minutes.
  3. Add the reserved marinade and water to the skillet, bring to a simmer, then return the chicken to the skillet, cover, and simmer for 30-40 minutes.
  4. Remove the lid and increase heat to medium-high to reduce the sauce for 5-10 minutes until thickened.
