Ingredients
- Chicken thighs: 1.5 lbs (about 680 grams)
- Soy sauce: 1/2 cup (120 ml)
- Garlic: 4 cloves, minced
- Ginger: 1 tablespoon, grated
- Sesame oil: 2 tablespoons
- Brown sugar: 2 tablespoons
- Green onions: 4, chopped (for garnish)
- Gochujang: 2 tablespoons
- Water: 1 cup (240 ml)
- Salt and pepper: to taste
Instructions
- Marinate the chicken by combining soy sauce, garlic, ginger, sesame oil, brown sugar, and gochujang in a bowl. Coat the chicken thighs and refrigerate for at least 30 minutes.
- In a skillet, heat oil and sear the chicken thighs skin-side down for 5-7 minutes until golden brown, then flip and sear the other side for 3-4 minutes.
- Add the reserved marinade and water to the skillet, bring to a simmer, then return the chicken to the skillet, cover, and simmer for 30-40 minutes.
- Remove the lid and increase heat to medium-high to reduce the sauce for 5-10 minutes until thickened.

- For a richer flavor, use organic or free-range chicken.
- Adjust spice levels by varying the amount of gochujang.
- Consider adding vegetables like carrots or potatoes during the braising step for added nutrition.
