Description

Ingredients

  • 1 cup milk (dairy or non-dairy)

  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 cup mix-ins (chocolate chips, blueberries, nuts, etc.)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with paper liners or cooking spray.
  2. In a large mixing bowl, whisk together the milk, Greek yogurt, honey, and eggs until smooth.
  3. In a separate bowl, combine the Kodiak Cakes Protein Pancake Mix, baking powder, and any optional dry ingredients like cinnamon.
  4. Gradually add the dry ingredients to the wet ingredients and stir gently until just combined. Fold in any mix-ins like chocolate chips or blueberries.
  5. Fill each muffin cup 3/4 full with the batter.
