- 1 cup milk (dairy or non-dairy)
- 1/2 cup Greek yogurt (or applesauce)
- 1/4 cup honey (or maple syrup)
- 2 large eggs
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1/2 cup mix-ins (chocolate chips, blueberries, nuts, etc.)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin with paper liners or cooking spray.
- In a large mixing bowl, whisk together the milk, Greek yogurt, honey, and eggs until smooth.
- In a separate bowl, combine the Kodiak Cakes Protein Pancake Mix, baking powder, and any optional dry ingredients like cinnamon.
- Gradually add the dry ingredients to the wet ingredients and stir gently until just combined. Fold in any mix-ins like chocolate chips or blueberries.
- Fill each muffin cup 3/4 full with the batter.
- Bake for 15-20 minutes or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely. Enjoy warm or store for later!
Notes
- If you don’t have Greek yogurt, you can use applesauce or regular yogurt.
- For a vegan version, use flaxseed or chia egg replacements and non-dairy milk and yogurt.
