Description

A light, fluffy dessert inspired by classic key lime pie featuring tangy mousse layers and crunchy graham cracker crumble.


Ingredients

  • 4 graham crackers
  • 3/4 cup rolled oats
  • 1/3 cup packed light brown sugar
  • 3 tablespoons all-purpose flour
  • 6 tablespoons cold butter, cubed
  • 1 1/2 cups heavy cream
  • 1/4 cup powdered sugar
  • 1 cup sweetened condensed milk
  • 1/3 cup freshly squeezed key lime juice
  • 1 teaspoon pure vanilla extract
  • Green food coloring (optional)
  • Key lime wedges for garnish

Instructions

  1. Preheat oven to 350°F. Pulse graham crackers in food processor to fine crumbs.
  2. In a bowl, combine graham cracker crumbs, rolled oats, brown sugar, and flour.
  3. Add cold cubed butter and mix with fingers until pea-sized clumps form.
  4. Spread mixture evenly on baking sheet and bake 20 minutes, stirring halfway, until golden and crisp. Cool.
  5. In a large bowl, beat heavy cream with powdered sugar until stiff peaks form. Reserve 1 cup whipped cream for topping.
  6. In separate bowl, mix sweetened condensed milk, key lime juice, vanilla extract, and optional green food coloring.
  7. Fold condensed milk mixture gently into remaining whipped cream until combined.
  8. In four glasses, layer about 1/4 cup graham cracker crumble, then 2 spoonfuls mousse; repeat layers until glasses are nearly full.
  9. Pipe reserved whipped cream on top of mousse in each glass.
  10. Sprinkle remaining graham cracker crumble on top and garnish with key lime wedge.
  11. Refrigerate mousse until chilled and set before serving.

  • Do not over-beat cream to avoid grainy texture.
  • Use freshly squeezed key lime juice for best flavor.
  • Chill mousse adequately to let flavors meld and set properly.
