- 1 ½ cups graham cracker crumbs
- ½ cup granulated sugar
- ⅓ cup unsalted butter, melted (for crust)
- 2 (14-ounce) cans sweetened condensed milk
- ½ cup fresh key lime juice
- 4 large egg yolks
- 1 tablespoon lime zest (optional)
Instructions
- Preheat the oven to 350°F (175°C). In a medium bowl, mix graham cracker crumbs, granulated sugar, and melted butter until moistened. Press the mixture into a 9×9-inch pan and bake for 10 minutes until golden. Let cool.
- In a large bowl, mix sweetened condensed milk and egg yolks until smooth. Gradually add key lime juice and mix. Optionally, stir in lime zest.
- Pour the filling over the cooled crust and bake for 15-20 minutes, until the filling is set but still slightly jiggly. Let cool at room temperature, then refrigerate for at least 2 hours.
- Once chilled, lift the bars out using the parchment lining. Cut into squares and serve with whipped cream or lime slices if desired.
Notes
- Ensure the filling is slightly jiggly when you take it out of the oven to avoid overbaking.
- Use fresh key limes for the best flavor.
- Chill the bars for a longer period to make cutting easier.
