The Key Lime Mojito is a refreshing twist on the classic cocktail, featuring mint, key lime juice, white rum, and a creamy finish with a graham cracker rim.

- 1/4 cup crushed graham crackers
- 3 Tbsp simple syrup, plus more for the glass
- 1/4 cup fresh mint leaves, plus more for serving
- 3 Tbsp fresh Key lime juice
- Ice
- 4 oz white rum
- 1 Tbsp heavy cream
- Key lime rounds for serving
Instructions
- Place crushed graham crackers on a plate and simple syrup on another. Dip glass rims into syrup, then into graham crackers to coat.
- In a cocktail shaker, muddle mint leaves and Key lime juice to release the mint’s oils.
- Add ice, white rum, heavy cream, and 3 Tbsp simple syrup to the shaker. Shake vigorously for 20 seconds until chilled.
- Fill prepared glasses with ice. Strain the mojito mixture into the glasses, avoiding mint and ice from the shaker.
- Garnish with extra mint leaves and a Key lime round. Serve immediately.
Notes
- Don’t over-muddle mint to avoid bitterness.
- Use coconut cream for a dairy-free version.
- Regular limes can substitute Key limes in a pinch.
- Chill glasses in advance for a colder drink.
