- ¼ cup granulated sugar
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- ½ cup sour cream
- ½ cup key lime juice (freshly squeezed)
- 2 large eggs
- 1 tablespoon lime zest
- 1 teaspoon vanilla extract
- Whipped cream for garnish
- Lime slices or zest for decoration
Instructions
- Preheat oven to 350°F (175°C). In a bowl, combine graham cracker crumbs, melted butter, and sugar. Press into the bottom of a 9-inch springform pan. Bake for 10 minutes and cool.
- Beat softened cream cheese until smooth. Add sugar and mix. Stir in sour cream, lime juice, lime zest, and vanilla extract. Add eggs one at a time, mixing after each addition.
- Pour the filling over the cooled crust. Tap the pan to remove air bubbles.
- Bake for 50-60 minutes or until the edges are set, and the center has a slight jiggle. Turn off the oven and let the cheesecake cool gradually in the oven for an hour. Let it cool at room temperature for another hour before refrigerating for at least 4 hours, preferably overnight.
