- 1 package lemon cake mix
- 1 package instant lemon pudding mix
- 3/4 cup water
- 1/2 cup vegetable oil
- 4 eggs
- 5 tablespoons key lime juice
- 1 1/2 cups confectioners’ sugar
- 3 tablespoons key lime juice (for glaze)
Instructions
- Preheat oven to 350°F (175°C).
- Lightly grease a 9×13 inch pan or a 10-inch bundt pan.
- In a large bowl, combine lemon cake mix, lemon pudding mix, water, vegetable oil, eggs, and 5 tablespoons key lime juice.
- Mix until smooth and lump-free.
- Pour batter into prepared pan and bake for 45 minutes or until a toothpick inserted in the center comes out clean.
- In a separate bowl, prepare glaze by mixing 1.5 cups confectioners’ sugar and 3 tablespoons key lime juice until smooth.
- Remove cake from oven and pour glaze over warm cake.
- Let the cake cool completely in the pan before serving.
Notes
- Do not overmix the batter to keep the cake light and tender.
- Regular lime juice can be used if key lime juice is unavailable.
- Optional: Add lime zest for a stronger citrus flavor.
