  • ¼ teaspoon salt (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, Jello mix, baking powder, and salt.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. Gradually add the Jello mix to the wet ingredients and mix on low speed until just combined.
  5. Drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 10-12 minutes until the edges are lightly golden and the centers look slightly underbaked.
  7. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
