Ingredients
- Chicken thighs: 4 pieces (about 1.5 lbs or 680 g)
- Fresh peaches: 2 medium, pitted and sliced
- Jalapenos: 2 medium, sliced
- Garlic: 4 cloves, minced
- Honey: 2 tablespoons (30 ml)
- Olive oil: 2 tablespoons (30 ml)
- Lime juice: 2 tablespoons (30 ml)
- Salt: 1 teaspoon (5 g)
- Pepper: 1/2 teaspoon (2 g)
Instructions
- Prepare the chicken by rinsing and patting it dry, then place it in a mixing bowl.
- Marinate the chicken with the marinade for at least 30 minutes in the refrigerator.
- Prepare the jalapeno peach sauce by mixing sliced peaches and jalapenos with a tablespoon of the marinade.
- Preheat the grill to medium-high heat or the oven to 400°F (200°C) and cook the chicken thighs until the internal temperature reaches 165°F (75°C).
- Add the sliced peaches and jalapenos to the grill or baking sheet in the last 5 minutes of cooking.
- Let the chicken rest for a few minutes before serving, then arrange on a platter and top with grilled peaches and jalapenos.
