Ingredients
- Chicken Breasts: 2 boneless, skinless chicken breasts (about 500g)
- Jalapenos: 2 diced jalapenos
- Lime Juice: 1/4 cup of freshly squeezed lime juice (about 2-3 limes)
- Chicken Broth: 4 cups of chicken broth (about 1 liter)
- Onion: 1 medium onion, diced
- Garlic: 3 cloves of minced garlic
- Ground Cumin: 1 teaspoon of ground cumin
- Cilantro: 1/4 cup of chopped fresh cilantro (plus more for garnish)
- Corn: 1 cup of corn (fresh, frozen, or canned)
- Avocado: 1 sliced avocado for topping
- Salt and Pepper: To taste
- Olive Oil: For cooking
Instructions
- Gather all your ingredients.
- Heat 1 tablespoon of olive oil in a large pot over medium heat. Season the chicken breasts with salt and pepper, then add to the pot. Cook for 5-7 minutes on each side until fully cooked. Remove and let cool.
- Add diced onion to the same pot and sauté for 3-4 minutes until translucent. Add minced garlic and diced jalapenos, cooking for an additional 2 minutes.
- Pour in the chicken broth and bring to a gentle simmer. Stir in ground cumin and lime juice, allowing to simmer for 10 minutes.
- Shred the cooked chicken into bite-sized pieces and add back to the pot along with corn and chopped cilantro. Simmer for another 5 minutes.
- Adjust seasoning with more salt, pepper, or lime juice as needed.
- Ladle the soup into bowls and top with slices of avocado and additional cilantro. Serve warm.
