  • Garlic: 3 cloves, minced
  • Italian herbs: 2 teaspoons, dried or 1 tablespoon fresh, chopped
  • Olive oil: 2 tablespoons (plus more for drizzling)
  • Salt and pepper: to taste
  • Toothpicks or kitchen twine: for securing the roll

Instructions

  1. Prepare the flank steak by slicing it horizontally to create a pocket.
  2. In a mixing bowl, combine spinach, ricotta, sun-dried tomatoes, garlic, and Italian herbs. Season with salt and pepper.
  3. Spread the stuffing mixture evenly over the inside of the flank steak and roll it tightly.
