  • 300 grams Italian sausage
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 400 grams diced tomatoes
  • 1/4 cup fresh basil leaves, chopped
  • 1/2 teaspoon red pepper flakes
  • Salt and pepper to taste
  • 50 grams grated Parmesan cheese

Instructions

  1. Cook the bow tie pasta in salted boiling water according to package instructions (10-12 minutes) until al dente. Reserve 1/2 cup of pasta water, then drain.
  2. In a large skillet, heat olive oil over medium heat. Remove casing from the Italian sausage, crumble it into the skillet, and cook until browned (5-7 minutes).
  3. Add minced garlic to the skillet and sauté for about 1 minute until fragrant.
  4. Pour in diced tomatoes and stir. Allow to simmer for 5 minutes, then return the cooked sausage to the skillet.
  5. Stir in chopped basil and red pepper flakes, season with salt and pepper, and add reserved pasta water if needed.
  6. Add the drained bow tie pasta to the skillet and toss until well coated. Cook for an additional 2-3 minutes to heat through.
  7. Plate the pasta, sprinkle with grated Parmesan cheese, and garnish with extra basil leaves. Serve warm.
