Description

A quick and delicious Instant Pot Chicken Cacciatore recipe that combines tender chicken with a rich tomato sauce, vegetables, and herbs.


Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 2 tablespoons olive oil
  • 1 medium onion, sliced
  • 2 bell peppers (any color), sliced
  • 4 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, with juices
  • 1 teaspoon Italian seasoning
  • 1/2 cup black olives, pitted and sliced
  • 1/2 cup red wine (or chicken broth for a non-alcoholic version)
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • 1/2 cup mushrooms, sliced (optional)
  • 1 carrot, diced (optional)
  • 1 teaspoon red pepper flakes (optional)
  • 1 tablespoon capers (optional)
  • Fresh basil or oregano (optional)

Instructions

  1. Prepare the ingredients by slicing the onion and bell peppers, and mincing the garlic.
  2. Set the Instant Pot to the ‘Sauté’ function, heat olive oil, and brown the chicken thighs for 5-7 minutes on one side and 3-4 minutes on the other side.
  3. Add sliced onion and bell peppers to the pot and sauté for 3-4 minutes, then add minced garlic and cook for another minute.
  4. Deglaze the pot with red wine or chicken broth, then stir in diced tomatoes, Italian seasoning, and olives. Return the chicken to the pot.
  5. Close the lid, set the valve to ‘Sealing’, and cook on ‘Manual’ or ‘Pressure Cook’ for 15 minutes.
  6. Allow for a natural pressure release for 10 minutes, then switch to ‘Venting’ to release remaining pressure. Check the chicken’s internal temperature to ensure it reaches 165°F (74°C).
  7. Serve hot, garnished with fresh parsley.
