- 4 chicken thighs, bone-in and skin-on
- 2 tablespoons olive oil
- 1 medium onion, sliced
- 2 bell peppers (any color), sliced
- 4 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, with juices
- 1 teaspoon Italian seasoning
- 1/2 cup black olives, pitted and sliced
- 1/2 cup red wine (or chicken broth for a non-alcoholic version)
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
- 1/2 cup mushrooms, sliced (optional)
- 1 carrot, diced (optional)
- 1 teaspoon red pepper flakes (optional)
- 1 tablespoon capers (optional)
- Fresh basil or oregano (optional)
Instructions
- Prepare the ingredients by slicing the onion and bell peppers, and mincing the garlic.
- Set the Instant Pot to the ‘Sauté’ function, heat olive oil, and brown the chicken thighs for 5-7 minutes on one side and 3-4 minutes on the other side.
- Add sliced onion and bell peppers to the pot and sauté for 3-4 minutes, then add minced garlic and cook for another minute.
- Deglaze the pot with red wine or chicken broth, then stir in diced tomatoes, Italian seasoning, and olives. Return the chicken to the pot.
- Close the lid, set the valve to ‘Sealing’, and cook on ‘Manual’ or ‘Pressure Cook’ for 15 minutes.
- Allow for a natural pressure release for 10 minutes, then switch to ‘Venting’ to release remaining pressure. Check the chicken’s internal temperature to ensure it reaches 165°F (74°C).
- Serve hot, garnished with fresh parsley.
