  • 1 cup (240ml) coconut milk
  • 1 cup (240ml) whole milk
  • 1/2 cup (100g) granulated sugar
  • 2 teaspoons (10g) gelatin powder
  • 3 tablespoons (45ml) water (for blooming gelatin)
  • 1/4 teaspoon (1g) salt
  • Fresh mango chunks (for garnish)
  • Fresh mint leaves (for garnish)

Instructions

  1. Prepare the mangoes by peeling and dicing them into small pieces, setting aside some for garnish.
  2. Blend the diced mangoes until smooth to create about 1 cup of mango puree.
  3. In a saucepan, heat coconut milk, whole milk, sugar, and salt until warm, then add bloomed gelatin and stir until dissolved.
  4. Combine the mango puree with the warm milk mixture, then pour into serving cups or a dish and refrigerate for at least 4 hours to set.
  5. Serve chilled, garnished with fresh mango chunks and mint leaves, optionally drizzled with mango sauce.
