- 1 cup (240ml) coconut milk
- 1 cup (240ml) whole milk
- 1/2 cup (100g) granulated sugar
- 2 teaspoons (10g) gelatin powder
- 3 tablespoons (45ml) water (for blooming gelatin)
- 1/4 teaspoon (1g) salt
- Fresh mango chunks (for garnish)
- Fresh mint leaves (for garnish)
Instructions
- Prepare the mangoes by peeling and dicing them into small pieces, setting aside some for garnish.
- Blend the diced mangoes until smooth to create about 1 cup of mango puree.
- In a saucepan, heat coconut milk, whole milk, sugar, and salt until warm, then add bloomed gelatin and stir until dissolved.
- Combine the mango puree with the warm milk mixture, then pour into serving cups or a dish and refrigerate for at least 4 hours to set.
- Serve chilled, garnished with fresh mango chunks and mint leaves, optionally drizzled with mango sauce.
