Description
Honeydew Sago is a refreshing Southeast Asian dessert featuring sweet honeydew melon, chewy tapioca pearls, and creamy coconut milk for a light, fruity treat.

- 1 small honeydew melon
- 400 g coconut milk
- 50 g granulated sugar
- 200 g tapioca pearls
Instructions
- Cut honeydew in half. Scoop melon balls from one half for garnish and chop the other half into chunks.
- In a blender, combine honeydew chunks, coconut milk, and sugar. Blend until smooth and creamy. Transfer to a bowl and chill for at least 30 minutes.
- Boil a pot of water, add tapioca pearls, stir immediately. Boil uncovered for 10 minutes, then cover and remove from heat, resting 10 minutes.
- Drain and rinse tapioca pearls under cold water to stop cooking.
- Gently fold tapioca pearls into chilled honeydew mixture.
- Serve chilled, topped with reserved honeydew balls and optional toasted coconut or mint.
Notes
- Use ripe honeydew for best sweetness and texture.
- Do not overcook tapioca pearls to avoid mushy texture.
- Rinse tapioca pearls well to prevent sticking.
