A delightful Honey-Glazed Date and Walnut Cake that combines rich sweetness from dates and honey with a crunchy texture from walnuts, perfect for any gathering or afternoon tea.

- 200g pitted dates, chopped
- 1 tsp baking soda
- 200ml boiling water
- 150g unsalted butter, softened
- 100g light brown sugar
- 2 tbsp honey
- 2 large eggs
- 1 tsp vanilla extract
- 180g plain flour
- 1 tsp baking powder
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- Zest of 1 large orange
- 100g chopped walnuts
For the honey-orange glaze:
- 3 tbsp honey
- Zest of 1 orange
- 1 tbsp fresh orange juice
Instructions
- Preheat your oven to 175°C (350°F) and prepare a 20cm round cake tin by greasing it and lining the bottom with parchment paper.
- Sift together the plain flour, baking powder, ground cinnamon, and ground nutmeg in a separate bowl.
- Cream together the softened unsalted butter, light brown sugar, and honey in a large mixing bowl until light and fluffy. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- Gradually fold the dry mixture into the wet mixture using a spatula, being careful not to overmix.
- Fold in the soaked dates (with soaking liquid) and chopped walnuts until evenly distributed.
- Pour the batter into the prepared cake tin and smooth the top. Bake for 40–45 minutes, checking for doneness with a skewer.
- Prepare the honey-orange glaze by warming honey, fresh orange juice, and orange zest in a small saucepan until runny.
- Once the cake is baked, let it cool slightly, poke holes in the top, and drizzle the warm glaze over it. Allow to cool before slicing.
Notes
- Store the cake wrapped tightly in plastic wrap or in an airtight container to keep it fresh.
- For longer storage, refrigerate for up to a week or freeze for up to three months.
- Serve with whipped cream, ice cream, or alongside tea or coffee for a delightful experience.
