Description

A delightful Honey-Glazed Date and Walnut Cake that combines rich sweetness from dates and honey with a crunchy texture from walnuts, perfect for any gathering or afternoon tea.


Ingredients

  • 200g pitted dates, chopped
  • 1 tsp baking soda
  • 200ml boiling water
  • 150g unsalted butter, softened
  • 100g light brown sugar
  • 2 tbsp honey
  • 2 large eggs
  • 1 tsp vanilla extract
  • 180g plain flour
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • Zest of 1 large orange
  • 100g chopped walnuts

For the honey-orange glaze:

  • 3 tbsp honey
  • Zest of 1 orange
  • 1 tbsp fresh orange juice

Instructions

  1. Preheat your oven to 175°C (350°F) and prepare a 20cm round cake tin by greasing it and lining the bottom with parchment paper.
  2. Sift together the plain flour, baking powder, ground cinnamon, and ground nutmeg in a separate bowl.
  3. Cream together the softened unsalted butter, light brown sugar, and honey in a large mixing bowl until light and fluffy. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. Gradually fold the dry mixture into the wet mixture using a spatula, being careful not to overmix.
  5. Fold in the soaked dates (with soaking liquid) and chopped walnuts until evenly distributed.
  6. Pour the batter into the prepared cake tin and smooth the top. Bake for 40–45 minutes, checking for doneness with a skewer.
  7. Prepare the honey-orange glaze by warming honey, fresh orange juice, and orange zest in a small saucepan until runny.
  8. Once the cake is baked, let it cool slightly, poke holes in the top, and drizzle the warm glaze over it. Allow to cool before slicing.
