Ingredients

  • Turkey bones – 2 pounds
  • Water – 12 cups
  • Carrots – 2, chopped
  • Celery – 2 stalks, chopped
  • Onion – 1, quartered
  • Garlic – 4 cloves, crushed
  • Bay leaves – 2
  • Thyme – 1 teaspoon, dried
  • Parsley – 1/4 cup, fresh

Instructions

  1. Place turkey bones in a large stockpot.
  2. Add water, carrots, celery, onion, garlic, bay leaves, thyme, and parsley.
  3. Bring to a boil over high heat.
  4. Reduce heat to low and simmer for 3-4 hours.
  5. Skim off any foam that rises to the surface.
  6. Strain the stock through a fine-mesh sieve into another pot.
  7. Let cool and store in airtight containers.
