  • 1 teaspoon vanilla extract
  • Optional spices (like cinnamon or nutmeg)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper.
  2. Mix rolled oats, chopped nuts, dried fruit, and spices (if using) in a large bowl.
  3. In a small saucepan, heat nut butter, honey, and brown sugar (if using) until smooth. Stir in vanilla extract and salt.
  4. Pour wet mixture over dry ingredients and stir until well combined.
  5. Transfer mixture to the baking dish and pack down tightly using a spatula or damp hands.
  6. Bake for 20-25 minutes or until golden brown. Let cool completely before cutting into bars.
