- 2 cups rolled oats
- 1 cup nuts (like almonds or walnuts), chopped
- 1/2 cup honey or maple syrup
- 1/2 cup nut butter (like almond or peanut butter)
- 1/4 cup brown sugar (optional)
- 1/2 cup dried fruit (like cranberries or raisins)
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- Optional spices (like cinnamon or nutmeg)
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper.
- Mix rolled oats, chopped nuts, dried fruit, and spices (if using) in a large bowl.
- In a small saucepan, heat nut butter, honey, and brown sugar (if using) until smooth. Stir in vanilla extract and salt.
- Pour wet mixture over dry ingredients and stir until well combined.
- Transfer mixture to the baking dish and pack down tightly using a spatula or damp hands.
- Bake for 20-25 minutes or until golden brown. Let cool completely before cutting into bars.
Notes
- Be sure to pack the mixture tightly in the baking dish to avoid crumbling.
- If the bars are too crumbly, try pressing down more firmly before baking.
- Use parchment paper to avoid sticking when removing bars from the dish.
