- 2 and 1/4 teaspoons instant or active dry yeast
- 3 tablespoons granulated sugar
- 3 tablespoons unsalted or salted butter, softened and cut into 3 pieces
- 3 cups all-purpose flour, plus more as needed
- 1 and 1/4 teaspoons salt
- 1 cup salted butter, slightly softened
- 1 tablespoon all-purpose flour (for butter mixture)
- 3/4 cup granulated sugar (for coating)
- 1 tablespoon ground cinnamon (for coating)
- Optional fillings: 6 tablespoons Nutella, jam, lemon curd, or pastry cream
Instructions
- Combine warm milk, yeast, and sugar in a bowl. Let sit for 5 minutes until foamy.
- Add softened butter, 2 cups of flour, and salt. Mix on medium speed for 2 minutes.
- Gradually add remaining flour and mix until a soft dough forms.
- Knead dough on a floured surface for 5 minutes until slightly tacky.
- Place dough in a greased bowl, cover, and let rise for 2 hours.
- Flatten dough into a rectangle, cover, and chill for 20 minutes.
- Mix 1 cup butter with 1 tablespoon flour until smooth.
- Roll chilled dough into a rectangle and spread butter mixture on top.
- Fold dough into thirds, roll out again, and repeat lamination three times, chilling between folds.
- Divide dough into 3 portions, roll out each, sprinkle with cinnamon sugar, cut into strips.
- Roll each strip into a spiral and place into greased muffin tin.
- Let shaped cruffins rise in the tin for 1 hour.
- Preheat oven to 350°F. Bake for 25–28 minutes until golden brown.
- Cool slightly, then roll warm cruffins in cinnamon sugar.
- Use a piping bag to fill with Nutella, jam, or lemon curd if desired. Serve warm.
