- 3 tablespoons unsalted butter (plus 3 to 4 more tablespoons for the pan)
- 1 cup all-purpose flour
- 1 tablespoon granulated sugar
- 1/8 teaspoon salt
- 3/4 cup whole milk (at room temperature)
- 1/2 cup water (at room temperature)
- 2 large eggs (at room temperature)
- 1 and 1/2 teaspoons pure vanilla extract
Instructions
- Melt the butter in a small saucepan over low heat, then let it cool for 5 minutes.
- In a blender, combine melted butter, flour, sugar, salt, milk, water, eggs, and vanilla. Blend until smooth, about 20-30 seconds. Chill the batter for 30-60 minutes.
- Heat a skillet over medium heat, grease with butter, pour in 3-4 tablespoons of batter, and swirl to coat the pan. Cook for 1-2 minutes until the edges lift, then flip and cook an additional 30 seconds to 1 minute.
- Fill the cooked crepes with your choice of fillings and serve warm. Enjoy!
