Ingredients

- 1 whole chicken (about 3–4 pounds)
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 onion, quartered
- 4 cloves garlic, smashed
- 1 bay leaf
- 10 cups water
- Salt to taste
Instructions
- Place the chicken in a large pot.
- Add chopped carrots, celery, onion, garlic, and bay leaf.
- Pour in the water, covering all ingredients.
- Bring to a boil over medium-high heat.
- Reduce heat and simmer for 4-6 hours.
- Skim off any foam that forms on the surface.
- Remove the chicken and strain the stock through a fine sieve.
- Season with salt to taste.
Notes
- Store the stock in the refrigerator for up to 5 days.
- Freeze for longer storage.
- Use leftover chicken for other recipes.
