Description

Homemade Blueberry Pie is a comforting classic dessert made with fresh blueberries, a flaky crust, and a sweet-tart filling, perfect for any occasion.

  • 6 cups fresh blueberries
  • 2/3 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 2 tablespoons cornstarch
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon cold unsalted butter, cut into small cubes
  • 1 large egg, beaten with 1 tablespoon milk (for egg wash)
  • Optional: coarse sugar for sprinkling on crust

Instructions

  1. Prepare your homemade or all-butter pie crust. Roll it out to about 12 inches in diameter and fit it into a 9-inch or 2-inch deep pie dish. Trim and shape the edges.
  2. In a large bowl, mix blueberries, sugar, flour, cornstarch, cinnamon, lemon juice, and lemon zest until evenly combined.
  3. Preheat oven to 425°F (218°C) and place a baking sheet on the lower oven rack to catch any drips.
  4. Pour the blueberry filling into the prepared crust and dot with cubes of butter.
  5. Roll out the second crust and cut into strips for a lattice top. Arrange over the filling in a crisscross pattern.
  6. Brush the lattice with egg wash and sprinkle with coarse sugar if desired.
  7. Bake at 425°F for 25 minutes, then reduce heat to 375°F (190°C) and bake for another 40–50 minutes until golden and bubbly.
  8. Remove from oven and cool on a wire rack for at least 4 hours before serving.

Notes

  • Use frozen blueberries if fresh ones are unavailable, but adjust the sugar slightly.
  • Allow the pie to cool completely before slicing to let the filling set properly.
  • Chill the pie crust before baking for best results.
  • Cover pie edges with foil if they begin to brown too quickly.
