- Homemade Pie Crust or All Butter Pie Crust
- 6 cups fresh blueberries
- 2/3 cup granulated sugar
- 1/4 cup all-purpose flour
- 2 tablespoons cornstarch
- 1/4 teaspoon ground cinnamon
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest
- 1 tablespoon cold unsalted butter, cut into small cubes
- 1 large egg, beaten with 1 tablespoon milk (for egg wash)
- Optional: coarse sugar for sprinkling on crust
Instructions
- Prepare your homemade or all-butter pie crust. Roll it out to about 12 inches in diameter and fit it into a 9-inch or 2-inch deep pie dish. Trim and shape the edges.
- In a large bowl, mix blueberries, sugar, flour, cornstarch, cinnamon, lemon juice, and lemon zest until evenly combined.
- Preheat oven to 425°F (218°C) and place a baking sheet on the lower oven rack to catch any drips.
- Pour the blueberry filling into the prepared crust and dot with cubes of butter.
- Roll out the second crust and cut into strips for a lattice top. Arrange over the filling in a crisscross pattern.
- Brush the lattice with egg wash and sprinkle with coarse sugar if desired.
- Bake at 425°F for 25 minutes, then reduce heat to 375°F (190°C) and bake for another 40–50 minutes until golden and bubbly.
- Remove from oven and cool on a wire rack for at least 4 hours before serving.
Notes
- Use frozen blueberries if fresh ones are unavailable, but adjust the sugar slightly.
- Allow the pie to cool completely before slicing to let the filling set properly.
- Chill the pie crust before baking for best results.
- Cover pie edges with foil if they begin to brown too quickly.
- Substitute with gluten-free flour and pie crust for a gluten-free version.
