- 2 and 1/2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1/2 cup unsalted butter, cubed and very cold
- 1 cup plus 2 tablespoons cold buttermilk
- 2 teaspoons honey
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
- Cut the cold, cubed butter into the flour mixture using a pastry cutter or your fingers until it resembles coarse crumbs.
- Make a well in the center and pour in 1 cup of buttermilk and honey. Gently fold until just combined.
- Turn the dough onto a floured surface and pat it into a 3/4-inch thick rectangle.
- Fold one side of the dough into the center, then the other side over. Rotate and repeat two more times to create layers.
- Flatten dough again to 3/4 inch thickness and cut out biscuits with a round cutter.
- Place biscuits close together on a baking sheet or in a cast-iron skillet.
- Brush the tops with remaining 2 tablespoons of buttermilk.
- Bake for 18–20 minutes, or until golden brown.
- Optional: Brush with melted butter and honey before serving.
Notes
- Don’t overwork the dough to keep biscuits tender and flaky.
- Ensure butter is very cold for best results.
- Can be frozen before baking for future use.
- Use fresh baking powder for a good rise.
