  • 1 lb homemade rough puff pastry or 2 sheets of store-bought frozen puff pastry (thawed)
  • 2 cups peeled and diced apples (approximately 2 medium apples)
  • 1 teaspoon cornstarch
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 cup granulated sugar or brown sugar
  • 1 large egg
  • 1 tablespoon milk (any kind)
  • 1/2 cup salted caramel (optional for drizzling)

Instructions

  1. Prepare the rough puff pastry or thaw store-bought puff pastry according to package instructions.
  2. In a medium saucepan, combine diced apples, cornstarch, vanilla extract, cinnamon, and sugar. Cook over medium heat, stirring for 5 minutes, then simmer on low for another 5 minutes. Let cool for 20 minutes.
  3. Line two baking sheets with parchment paper. Roll out the pastry into a 12-inch square and cut into 4-inch squares (9 for homemade, 8 for store-bought).
  4. Spoon 2–3 tablespoons of apple filling into each square. Fold over to form a triangle and crimp the edges with a fork to seal. Chill the turnovers for 15 minutes in the refrigerator.
  5. Preheat the oven to 400°F (204°C). Whisk together the egg and milk to create an egg wash. Brush the tops of the turnovers with the egg wash and cut 2–3 small steam vents in each.
  6. Bake for 23–25 minutes or until golden brown and puffed. Cool for 5 minutes on the baking sheet. Drizzle with salted caramel if desired.
