Homemade apple turnovers are flaky pastries filled with warm, cinnamon-spiced apples. Perfect for breakfast, dessert, or a cozy snack.

- 1 lb homemade rough puff pastry or 2 sheets of store-bought frozen puff pastry (thawed)
- 2 cups peeled and diced apples (approximately 2 medium apples)
- 1 teaspoon cornstarch
- 2 teaspoons pure vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 cup granulated sugar or brown sugar
- 1 large egg
- 1 tablespoon milk (any kind)
- 1/2 cup salted caramel (optional for drizzling)
Instructions
- Prepare the rough puff pastry or thaw store-bought puff pastry according to package instructions.
- In a medium saucepan, combine diced apples, cornstarch, vanilla extract, cinnamon, and sugar. Cook over medium heat, stirring for 5 minutes, then simmer on low for another 5 minutes. Let cool for 20 minutes.
- Line two baking sheets with parchment paper. Roll out the pastry into a 12-inch square and cut into 4-inch squares (9 for homemade, 8 for store-bought).
- Spoon 2–3 tablespoons of apple filling into each square. Fold over to form a triangle and crimp the edges with a fork to seal. Chill the turnovers for 15 minutes in the refrigerator.
- Preheat the oven to 400°F (204°C). Whisk together the egg and milk to create an egg wash. Brush the tops of the turnovers with the egg wash and cut 2–3 small steam vents in each.
- Bake for 23–25 minutes or until golden brown and puffed. Cool for 5 minutes on the baking sheet. Drizzle with salted caramel if desired.
Notes
- Do not overfill turnovers to prevent leaking during baking.
- Keep pastry and filling chilled to ensure flaky texture.
- You can freeze unbaked turnovers and bake them from frozen.
