Ingredients
Scale
- 1 cup lentils
- 2 cups water
- 1 cucumber, diced
- 1 bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, chopped
- 1/4 cup parsley, chopped
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Rinse lentils under cold water.
- In a pot, combine lentils and water. Bring to a boil.
- Reduce heat and simmer for 20-25 minutes until tender.
- Drain lentils and let cool.
- In a large bowl, mix cooled lentils, cucumber, bell pepper, tomatoes, onion, and parsley.
- In a separate bowl, whisk olive oil, lemon juice, salt, and pepper.
- Pour dressing over the salad and toss to combine.
- Serve chilled or at room temperature.

- For added protein, consider adding feta cheese or chickpeas.
- This salad keeps well in the fridge for up to 3 days.
