Description
A delicious and filling casserole that combines all the flavors of a classic burrito, perfect for family meals or gatherings.
Ingredients
- Ground beef: 1 lb (450 g)
- Black beans: 1 can (15 oz or 425 g), drained and rinsed
- Cooked rice: 2 cups (about 300 g)
- Corn: 1 cup, either frozen or canned
- Diced tomatoes: 1 can (14.5 oz or 410 g), undrained
- Taco seasoning: 1 packet (about 1 oz or 28 g)
- Shredded cheese: 2 cups (about 200 g)
- Tortillas: 6 large flour or corn tortillas
- Olive oil: 1 tablespoon
- Salt and pepper: to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat and cook ground beef until browned. Drain excess fat.
- Add black beans, cooked rice, corn, diced tomatoes, and taco seasoning to the skillet. Stir and simmer for 5 minutes.
- Lightly grease a 9×13 inch baking dish. Layer 2 tortillas, half of the beef mixture, and 1 cup of cheese. Repeat layers and top with remaining tortillas and cheese.
- Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden brown.
- Let cool for a few minutes before serving.
Notes
- Can be made ahead of time and stored in the refrigerator for up to 2 days.
- Leftovers can be refrigerated for up to 3 days or frozen for up to 3 months.
- For vegetarian options, substitute ground beef with chickpeas and add more vegetables.
- For gluten-free, use gluten-free tortillas and ensure all ingredients are certified gluten-free.
