Description

A delicious and filling casserole that combines all the flavors of a classic burrito, perfect for family meals or gatherings.


Ingredients

  • Ground beef: 1 lb (450 g)
  • Black beans: 1 can (15 oz or 425 g), drained and rinsed
  • Cooked rice: 2 cups (about 300 g)
  • Corn: 1 cup, either frozen or canned
  • Diced tomatoes: 1 can (14.5 oz or 410 g), undrained
  • Taco seasoning: 1 packet (about 1 oz or 28 g)
  • Shredded cheese: 2 cups (about 200 g)
  • Tortillas: 6 large flour or corn tortillas
  • Olive oil: 1 tablespoon
  • Salt and pepper: to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat and cook ground beef until browned. Drain excess fat.
  3. Add black beans, cooked rice, corn, diced tomatoes, and taco seasoning to the skillet. Stir and simmer for 5 minutes.
  4. Lightly grease a 9×13 inch baking dish. Layer 2 tortillas, half of the beef mixture, and 1 cup of cheese. Repeat layers and top with remaining tortillas and cheese.
  5. Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden brown.
  6. Let cool for a few minutes before serving.

Notes

  • Can be made ahead of time and stored in the refrigerator for up to 2 days.
  • Leftovers can be refrigerated for up to 3 days or frozen for up to 3 months.
  • For vegetarian options, substitute ground beef with chickpeas and add more vegetables.
