Description
Healthy Peanut Butter Chunk Oatmeal Bars are a delicious and nutritious snack, combining oats, peanut butter, and sweeteners for a chewy, protein-packed treat.
Ingredients
Scale
- 2 cups rolled oats
- 1 cup natural peanut butter
- 1/2 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup chocolate chunks or chips (optional)
- 1/2 cup chopped nuts (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8-inch or 9×9-inch baking dish with parchment paper.
- In a large mixing bowl, combine the peanut butter, honey (or maple syrup), and vanilla extract. Mix until smooth and well combined.
- In another bowl, mix together the rolled oats, baking soda, and salt. Add chocolate chunks or nuts if desired.
- Gradually add the dry mixture to the wet mixture. Stir until everything is well combined, forming a thick batter.
- Transfer the mixture to the prepared baking dish, pressing it down firmly to form an even layer.
- Bake for 20-25 minutes or until the edges are golden brown. Remove from the oven and allow to cool for 10 minutes.
- Once cooled, lift the bars from the pan using the parchment paper and let them cool completely before slicing into squares.
Notes
- Do not overmix the batter, as it can result in denser bars.
- Be cautious with the baking time; overbaking can dry out the bars.
- For a chewy texture, use old-fashioned rolled oats rather than quick oats.
- Feel free to adjust the sweetener amount to your taste before baking.
