Ingredients
- Green lentils: 1 cup (uncooked)
- Cherry tomatoes: 1 cup, halved
- Cucumber: 1 medium, diced
- Red onion: 1/4 cup, finely chopped
- Bell pepper: 1 medium, diced (any color)
- Fresh parsley: 1/4 cup, chopped
- Olive oil: 3 tablespoons
- Lemon juice: 2 tablespoons (freshly squeezed)
- Salt: to taste
- Pepper: to taste
Instructions
- Rinse 1 cup of green lentils under cold water and place in a medium pot with 3 cups of water. Bring to a boil, then reduce heat and simmer for 20-25 minutes until tender. Drain and cool.
- Prepare the vegetables: halve cherry tomatoes, dice cucumber, finely chop red onion, and bell pepper, and chop fresh parsley.
- In a large mixing bowl, combine cooled lentils, cherry tomatoes, cucumber, red onion, bell pepper, and parsley. Stir gently.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper to make the dressing.
- Pour the dressing over the salad and toss gently to coat. Adjust seasoning if needed and chill in the refrigerator for at least 30 minutes before serving.
