Ingredients

  • Green lentils: 1 cup (uncooked)
  • Cherry tomatoes: 1 cup, halved
  • Cucumber: 1 medium, diced
  • Red onion: 1/4 cup, finely chopped
  • Bell pepper: 1 medium, diced (any color)
  • Fresh parsley: 1/4 cup, chopped
  • Olive oil: 3 tablespoons
  • Lemon juice: 2 tablespoons (freshly squeezed)
  • Salt: to taste
  • Pepper: to taste

Instructions

  1. Rinse 1 cup of green lentils under cold water and place in a medium pot with 3 cups of water. Bring to a boil, then reduce heat and simmer for 20-25 minutes until tender. Drain and cool.
  2. Prepare the vegetables: halve cherry tomatoes, dice cucumber, finely chop red onion, and bell pepper, and chop fresh parsley.
  3. In a large mixing bowl, combine cooled lentils, cherry tomatoes, cucumber, red onion, bell pepper, and parsley. Stir gently.
  4. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper to make the dressing.
  5. Pour the dressing over the salad and toss gently to coat. Adjust seasoning if needed and chill in the refrigerator for at least 30 minutes before serving.
