Ingredients

- 6 hard-boiled eggs
- 1/4 cup Greek yogurt
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1/4 cup chopped celery
- 1/4 cup chopped green onions
- Salt and pepper to taste
Instructions
- Hard boil the eggs and let them cool.
- Peel the eggs and chop them into small pieces.
- In a bowl, mix Greek yogurt, Dijon mustard, and lemon juice.
- Add chopped celery and green onions to the bowl.
- Add the chopped eggs and mix gently.
- Season with salt and pepper to taste.
- Serve on whole grain bread or lettuce leaves.

- Store leftovers in the refrigerator.
