- 2 large eggs
- ½ cup plain Greek yogurt or applesauce

- ½ cup chopped nuts (optional)
- ½ cup raisins or dried cranberries (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease with non-stick spray.
- In a large bowl, mix the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, combine brown sugar, honey (or maple syrup), eggs, Greek yogurt (or applesauce), and vanilla extract. Whisk until smooth.
- Gradually add the wet ingredients into the dry ingredients, stirring until just combined.
- Fold in the grated carrots, nuts, and raisins if using. Stir until evenly combined.
- Fill each muffin cup about two-thirds full with batter. Optionally, sprinkle extra nuts or raisins on top.
- Bake for 18-22 minutes or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- Do not overmix the batter to avoid dense muffins.
- Ensure the carrots are finely grated for even distribution.
- For a dairy-free version, replace Greek yogurt with plant-based yogurt and use non-dairy milk.
