Ingredients

  • 2 large eggs
  • ½ cup plain Greek yogurt or applesauce

  • ½ cup chopped nuts (optional)
  • ½ cup raisins or dried cranberries (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease with non-stick spray.
  2. In a large bowl, mix the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, combine brown sugar, honey (or maple syrup), eggs, Greek yogurt (or applesauce), and vanilla extract. Whisk until smooth.
  4. Gradually add the wet ingredients into the dry ingredients, stirring until just combined.
  5. Fold in the grated carrots, nuts, and raisins if using. Stir until evenly combined.
  6. Fill each muffin cup about two-thirds full with batter. Optionally, sprinkle extra nuts or raisins on top.
  7. Bake for 18-22 minutes or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
