Description

Healthy Berry Streusel Bars are a delicious and wholesome treat made with juicy berries, oats, and a nutty crumble topping. Perfect for breakfast, snacks, or dessert, these bars are naturally sweetened and full of fiber and nutrients.


Ingredients

  • 1 and 1/2 Tablespoons cornstarch
  • 1 and 1/2 Tablespoons water
  • 2 cups fresh or frozen mixed berries
  • 1/4 cup pure maple syrup (for filling)
  • 1 Tablespoon coconut sugar, brown sugar, or granulated sugar
  • 2 and 1/2 cups old-fashioned whole rolled oats or quick oats
  • 1/2 teaspoon ground cinnamon
  • 1 cup almond butter
  • 1/4 cup pure maple syrup (for crust)
  • 1/4 cup unsweetened applesauce
  • 1/4 cup coconut oil, melted (or melted butter)
  • 1/2 cup sliced or chopped almonds
  • 1 extra Tablespoon oats (for topping)

Instructions

  1. In a small bowl, whisk together the cornstarch and water.
  2. In a saucepan over medium heat, combine the berry mixture: berries, maple syrup, sugar, and cornstarch mixture. Simmer for 2 minutes, smashing some berries. Let it cool completely.
  3. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
  4. Pulse 2 1/2 cups of oats in a food processor to make oat flour. Transfer to a mixing bowl.
  5. Add cinnamon, almond butter, maple syrup, applesauce, and melted coconut oil. Mix until combined.
  6. Press most of the oat mixture evenly into the prepared pan to form the base.
  7. Spread cooled berry filling over the crust layer.
  8. Mix chopped almonds and remaining crumb mixture with 1 Tablespoon of oats for the topping. Sprinkle over the filling.
  9. Bake for 27–31 minutes or until golden brown on top.
  10. Let cool completely in the pan before cutting into squares.

Notes

  • Let the berry filling cool fully before assembling the bars.
  • Do not overcook the berry mixture to avoid a gummy texture.
  • Press the base mixture gently for a lighter texture.
  • Store in an airtight container at room temperature or in the refrigerator.
  • Freeze for up to 3 months, separated by parchment paper.
