Ingredients

  • 2 cups rolled oats
  • 1 cup nut butter (peanut, almond, or cashew)
  • 1/2 cup honey or maple syrup
  • 1/2 cup dried fruit (raisins, cranberries, or apricots)
  • 1/4 cup nuts or seeds (almonds, walnuts, or chia seeds)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking dish with parchment paper.
  2. In a large mixing bowl, combine rolled oats, dried fruit, and nuts or seeds. Stir until well mixed.
  3. In another bowl, combine nut butter and honey (or maple syrup). Microwave for 20 seconds to soften if needed, then mix until smooth.
  4. Pour the wet mixture over the dry ingredients and stir until everything is coated.
  5. Transfer the mixture to the prepared baking dish, pressing it firmly into an even layer.
  6. Bake for 15-20 minutes, or until the edges are golden brown. Allow to cool for 10-15 minutes before lifting out using parchment paper and cutting into bars.

Notes

  • Be sure to pack the mixture tightly into the baking dish to prevent the bars from crumbling.
  • If the mixture is too dry, add a little more nut butter or sweetener to help bind it together.
  • Let the bars cool before cutting to maintain their shape.
