  • 1/2 teaspoon salt
  • 1 cup cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract (for filling)
  • Powdered sugar (for dusting)

Instructions

  1. Preheat the oven and prepare a jelly roll pan with parchment paper.
  2. In a large mixing bowl, beat the eggs and sugar until thick and pale.
  3. Add pumpkin puree and vanilla extract, mixing until combined.
  4. In a separate bowl, whisk together the dry ingredients and gradually add to the pumpkin mixture.
  5. Pour the batter into the prepared pan and bake for 13-15 minutes.
  6. Dust a kitchen towel with powdered sugar and invert the baked cake onto it.
  7. Roll the cake in the towel and let it cool completely.
  8. Prepare the cream cheese filling by mixing cream cheese, butter, powdered sugar, and vanilla extract until smooth.
  9. Unroll the cooled cake, spread the filling, and roll it back up without the towel.
  10. Wrap in plastic wrap and refrigerate for at least one hour.
  11. Dust with powdered sugar and decorate before serving.
