Instructions
- Preheat the oven and prepare a jelly roll pan with parchment paper.
- In a large mixing bowl, beat the eggs and sugar until thick and pale.
- Add pumpkin puree and vanilla extract, mixing until combined.
- In a separate bowl, whisk together the dry ingredients and gradually add to the pumpkin mixture.
- Pour the batter into the prepared pan and bake for 13-15 minutes.
- Dust a kitchen towel with powdered sugar and invert the baked cake onto it.
- Roll the cake in the towel and let it cool completely.
- Prepare the cream cheese filling by mixing cream cheese, butter, powdered sugar, and vanilla extract until smooth.
- Unroll the cooled cake, spread the filling, and roll it back up without the towel.
- Wrap in plastic wrap and refrigerate for at least one hour.
- Dust with powdered sugar and decorate before serving.
