Ingredients

- 1 pound ground turkey
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 packet taco seasoning
- 1 cup diced tomatoes
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a skillet over medium heat.
- Add onion and garlic; sauté until soft.
- Add ground turkey; cook until browned.
- Stir in bell pepper, black beans, and corn.
- Add taco seasoning and diced tomatoes; mix well.
- Cook for an additional 5-7 minutes.
- Season with salt and pepper.
- Garnish with fresh cilantro before serving.
Notes
- Serve with tortillas or over rice.
- Can add cheese on top if desired.
- Store leftovers in the refrigerator for up to 3 days.
