Description
A delicious and nutritious ground turkey and sweet potato bake that combines lean protein with the natural sweetness of sweet potatoes and colorful vegetables.
Ingredients
- Ground turkey: 1 lb (450 g)
- Sweet potatoes: 2 medium (about 500 g)
- Onion: 1 medium, chopped
- Garlic: 3 cloves, minced
- Bell pepper: 1 medium, diced (any color)
- Fresh spinach: 2 cups, chopped
- Olive oil: 2 tablespoons
- Ground cumin: 1 teaspoon
- Paprika: 1 teaspoon
- Salt: 1 teaspoon (or to taste)
- Black pepper: 1/2 teaspoon (or to taste)
- Grated cheese (optional): 1 cup
Instructions
- Prep the ingredients by peeling and dicing the sweet potatoes, chopping the onion and bell pepper, mincing the garlic, and washing and chopping the spinach.
- In a large skillet, heat olive oil over medium heat, add onion and garlic, and sauté for 2-3 minutes until translucent.
- Add ground turkey to the skillet, season with salt, black pepper, cumin, and paprika, and cook for 5-7 minutes until browned and fully cooked.
- In a large pot, bring water to a boil, add diced sweet potatoes, and cook for about 10 minutes until just tender. Drain and set aside.
- Stir in diced bell pepper and chopped spinach into the turkey mixture, cook for an additional 2-3 minutes until spinach wilts, then gently fold in the cooked sweet potatoes.
- Transfer the mixture to a greased 9×13 inch baking dish, sprinkle cheese on top if using, and bake in a preheated oven at 400°F (200°C) for 25-30 minutes until the top is golden and slightly crisp.
- Let cool for a few minutes before serving.
Notes
- Store leftovers in an airtight container in the fridge for 3-4 days.
- This dish can be frozen in individual portions for easy reheating later.
- Feel free to substitute ground turkey with other meats like ground chicken or lean beef.
