Description

A delicious and nutritious ground turkey and sweet potato bake that combines lean protein with the natural sweetness of sweet potatoes and colorful vegetables.


Ingredients

  • Ground turkey: 1 lb (450 g)
  • Sweet potatoes: 2 medium (about 500 g)
  • Onion: 1 medium, chopped
  • Garlic: 3 cloves, minced
  • Bell pepper: 1 medium, diced (any color)
  • Fresh spinach: 2 cups, chopped
  • Olive oil: 2 tablespoons
  • Ground cumin: 1 teaspoon
  • Paprika: 1 teaspoon
  • Salt: 1 teaspoon (or to taste)
  • Black pepper: 1/2 teaspoon (or to taste)
  • Grated cheese (optional): 1 cup

Instructions

  1. Prep the ingredients by peeling and dicing the sweet potatoes, chopping the onion and bell pepper, mincing the garlic, and washing and chopping the spinach.
  2. In a large skillet, heat olive oil over medium heat, add onion and garlic, and sauté for 2-3 minutes until translucent.
  3. Add ground turkey to the skillet, season with salt, black pepper, cumin, and paprika, and cook for 5-7 minutes until browned and fully cooked.
  4. In a large pot, bring water to a boil, add diced sweet potatoes, and cook for about 10 minutes until just tender. Drain and set aside.
  5. Stir in diced bell pepper and chopped spinach into the turkey mixture, cook for an additional 2-3 minutes until spinach wilts, then gently fold in the cooked sweet potatoes.
  6. Transfer the mixture to a greased 9×13 inch baking dish, sprinkle cheese on top if using, and bake in a preheated oven at 400°F (200°C) for 25-30 minutes until the top is golden and slightly crisp.
  7. Let cool for a few minutes before serving.
