Instructions
- Mix the marinade ingredients in a bowl: lemongrass, garlic, shallots, fish sauce, sugar, black pepper, and vegetable oil.
- Place chicken thighs in a resealable bag or shallow dish and pour the marinade over them, ensuring they are well coated. Seal or cover and refrigerate for at least 1 hour, preferably overnight.
- Preheat the grill to medium-high heat (around 400°F or 200°C) about 15-20 minutes before grilling.
- Remove chicken from the marinade, allowing excess to drip off, and place skin-side down on the grill. Grill for 6-8 minutes until crispy, then flip and grill for another 6-8 minutes until the internal temperature reaches 165°F (75°C).
