  • 2 stalks of lemongrass: Use only the white part, finely chopped.
  • 4 cloves of garlic: Minced.
  • 2 shallots: Finely chopped.
  • 3 tablespoons fish sauce: A staple in Vietnamese cooking.
  • 2 tablespoons sugar: Balances the saltiness of the fish sauce.
  • 1 teaspoon black pepper: Freshly ground.
  • 2 tablespoons vegetable oil: Helps the marinade stick to the chicken.
  • Fresh cilantro and lime wedges: Optional garnishes.

Instructions

  1. Mix the marinade ingredients in a bowl: lemongrass, garlic, shallots, fish sauce, sugar, black pepper, and vegetable oil.
  2. Place chicken thighs in a resealable bag or shallow dish and pour the marinade over them, ensuring they are well coated. Seal or cover and refrigerate for at least 1 hour, preferably overnight.
  3. Preheat the grill to medium-high heat (around 400°F or 200°C) about 15-20 minutes before grilling.
