Ingredients

  • Fresh spinach: 2 cups, packed
  • Kale: 1 cup, stems removed and chopped
  • Zucchini: 1 medium, diced
  • Green peas: 1 cup (fresh or frozen)
  • Vegetable broth: 4 cups
  • Garlic: 2 cloves, minced
  • Onion: 1 medium, chopped
  • Lemon juice: 2 tablespoons (freshly squeezed)
  • Salt: to taste
  • Olive oil: 1 tablespoon (for sautéing)
  • Toasted seeds: such as pumpkin or sunflower seeds, for garnish

Instructions

  1. Wash the fresh spinach and kale thoroughly under cold water. Remove the stems from the kale and chop it into small pieces. Dice the zucchini into small cubes.
  2. In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing for about 3-4 minutes until the onion is translucent.
  3. Stir in the diced zucchini, fresh spinach, kale, and green peas. Cook for another 3-5 minutes until the greens wilt and the zucchini softens.
  4. Pour in 4 cups of vegetable broth and bring to a boil. Reduce heat to a simmer and cook for 10-15 minutes.
  5. Use an immersion blender to blend the soup until smooth. Return the soup to the pot.
  6. Stir in 2 tablespoons of freshly squeezed lemon juice and season with salt to taste. Adjust seasoning as needed.
  7. Ladle the soup into bowls and garnish with toasted seeds and a drizzle of lemon juice. Enjoy!
