Ingredients

  • Fresh green beans: 200 grams (about 7 oz), trimmed and cut into 1-inch pieces.
  • Cooked farro: 1 cup (about 200 grams).
  • Cherry tomatoes: 250 grams (about 9 oz), halved.
  • Red onion: 1 small, finely chopped.
  • Feta cheese: 100 grams (about 3.5 oz), crumbled.
  • Olive oil: 3 tablespoons.
  • Lemon juice: 2 tablespoons (freshly squeezed).
  • Salt and pepper: to taste.

Instructions

  1. Cook the farro by rinsing it under cold water, boiling it in salted water for 20-30 minutes until tender, then draining and cooling.
  2. Prepare the green beans by boiling them in salted water for 3-4 minutes, then transferring them to ice water to cool.
  3. In a large mixing bowl, combine the cooked farro, blanched green beans, halved cherry tomatoes, and chopped red onion.
