Ingredients
- Fresh green beans: 200 grams (about 7 oz), trimmed and cut into 1-inch pieces.
- Cooked farro: 1 cup (about 200 grams).
- Cherry tomatoes: 250 grams (about 9 oz), halved.
- Red onion: 1 small, finely chopped.
- Feta cheese: 100 grams (about 3.5 oz), crumbled.
- Olive oil: 3 tablespoons.
- Lemon juice: 2 tablespoons (freshly squeezed).
- Salt and pepper: to taste.
Instructions
- Cook the farro by rinsing it under cold water, boiling it in salted water for 20-30 minutes until tender, then draining and cooling.
- Prepare the green beans by boiling them in salted water for 3-4 minutes, then transferring them to ice water to cool.
- In a large mixing bowl, combine the cooked farro, blanched green beans, halved cherry tomatoes, and chopped red onion.
- Prepare the dressing by whisking together olive oil, lemon juice, salt, and pepper in a small bowl.
