Ingredients

  • 2 chicken breasts (about 1 lb or 450 g), boneless and skinless
  • 1 cup jasmine rice (about 200 g)
  • 6 cups chicken broth (about 1.5 liters)
  • 1/2 cup fresh lemon juice (about 4 lemons)
  • 3 cloves garlic, minced
  • 1 medium onion, diced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1/4 cup fresh dill, chopped (or 2 tablespoons dried dill)
  • Black pepper, to taste
  • Salt, to taste
  • Olive oil, for cooking

Instructions

  1. Heat a tablespoon of olive oil in a large pot over medium heat. Add the chicken breasts, season with salt and black pepper, and cook for about 5-7 minutes on each side until golden brown and fully cooked. Remove and shred the chicken.
  2. In the same pot, add more olive oil if needed, then add the diced onion, carrots, and celery. Sauté for about 5-7 minutes until softened. Stir in the minced garlic and cook for an additional minute.
  3. Pour in the chicken broth and bring to a boil. Stir in the jasmine rice, reduce heat to low, cover, and let simmer for about 15 minutes until the rice is tender.
  4. Add the shredded chicken back into the pot and stir gently to combine all ingredients.
  5. Pour in the fresh lemon juice and sprinkle in the chopped dill. Adjust seasoning with additional salt and black pepper as needed. Serve hot.
