Ingredients
- Ground beef: 1 lb (450 g)
- Orzo pasta: 1 cup (200 g)
- Diced tomatoes: 1 can (14.5 oz or 400 g)
- Red onion: 1 medium, diced
- Garlic: 3 cloves, minced
- Feta cheese: 1 cup, crumbled (about 150 g)
- Kalamata olives: 1/2 cup, pitted and sliced
- Olive oil: 2 tablespoons (30 ml)
- Oregano: 1 teaspoon (dried)
- Fresh parsley: 1/4 cup, chopped (for garnish)
- Salt and pepper: to taste
- Water or beef broth: 2 cups (480 ml)
Instructions
- Gather all your ingredients. Chop the red onion and mince the garlic.
- In a large skillet, heat the olive oil over medium heat. Add the diced red onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and stir for another minute.
- Add the ground beef to the skillet, breaking it up as it cooks. Season with salt, pepper, and oregano. Cook until browned, about 5-7 minutes, and drain excess fat if necessary.
- Cook the orzo according to package instructions, drain, and set aside. Stir in the diced tomatoes with their juice into the skillet with the beef, then add the cooked orzo and mix well.
- Let the mixture simmer for about 5 minutes, stirring occasionally.
- Fold in the sliced Kalamata olives and crumbled feta cheese, reserving some feta for garnish. Cook for an additional 2-3 minutes until heated through.
- Remove from heat, transfer to a serving dish, and garnish with remaining feta cheese and chopped parsley.
