- 1 cup confectioners’ sugar (for glaze)
- 2 tablespoons freshly squeezed grapefruit juice (for glaze)
- 1/4 teaspoon pure vanilla extract (for glaze)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan with butter or non-stick spray.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In another bowl, whisk the eggs until well beaten. Add Greek yogurt, brown sugar, vegetable oil, grapefruit juice, grapefruit zest, vanilla extract, and vanilla bean seeds; mix well.
- Pour wet ingredients into dry ingredients and gently fold until just combined. Avoid overmixing.
- Pour batter into prepared loaf pan and smooth the top.
- Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean. If browning too fast, cover loosely with foil.
- Allow cake to cool in pan for a few minutes, then transfer to wire rack to cool completely.
- To make glaze, whisk confectioners’ sugar, grapefruit juice, and vanilla extract in a small bowl until smooth.
- Once cake is cool, drizzle glaze evenly over the top. Let set before slicing and serving.
