Description

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan with butter or non-stick spray.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, whisk the eggs until well beaten. Add Greek yogurt, brown sugar, vegetable oil, grapefruit juice, grapefruit zest, vanilla extract, and vanilla bean seeds; mix well.
  4. Pour wet ingredients into dry ingredients and gently fold until just combined. Avoid overmixing.
  5. Pour batter into prepared loaf pan and smooth the top.
  6. Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean. If browning too fast, cover loosely with foil.
  7. Allow cake to cool in pan for a few minutes, then transfer to wire rack to cool completely.
  8. To make glaze, whisk confectioners’ sugar, grapefruit juice, and vanilla extract in a small bowl until smooth.
