- 1 cup granulated sugar

- ¼ teaspoon salt
- 2 ½ cups whole milk
- 3 large egg yolks
- 1 teaspoon vanilla extract
- 2 tablespoons unsalted butter (for richness)

Instructions
- Prepare the pie crust by mixing flour and salt, adding cold butter, and combining until it resembles coarse crumbs. Add ice water and form into dough. Refrigerate for 30 minutes.
- Roll out the dough and press into a 9-inch pie pan. Prick the bottom and refrigerate while preparing the filling.
- For the chocolate filling, mix sugar, cocoa powder, cornstarch, and salt. Gradually whisk in milk and heat over medium, stirring constantly until thickened. Temper egg yolks with the mixture and stir them back into the saucepan. Remove from heat and stir in vanilla and butter.
- Pour the chocolate filling into the prepared pie crust. Bake at 350°F (175°C) for 25-30 minutes, then cool and refrigerate for at least 3 hours.
Notes
- Allow the dough to chill to avoid shrinkage during baking.
- Use room temperature eggs for a smoother filling.
- Add a pinch of espresso powder to enhance the chocolate flavor.
- If the chocolate filling is too runny, cook it a bit longer on low heat.
