- 120 g (1 cup) walnuts – chopped
- 190 g (1 ½ cups) self-raising flour
- 1 tsp baking powder
- ½ tsp ground cinnamon
- ½ tsp ground ginger
- ½ tsp salt
- 150 g (¾ cup, packed) light brown sugar
- 100 g (½ cup) unsalted butter – melted
- 2 large eggs
- 180 ml (¾ cup) milk
- 1 tsp vanilla extract
For the warm honey syrup:
- 120 ml (½ cup) honey
- 60 g (¼ cup) unsalted butter
- 2 tbsp brown sugar
- 2 tbsp water
Instructions
- Chop the dried apricots into small pieces and soak them in warm water for 10 minutes if desired.
- In a large mixing bowl, whisk together melted butter and light brown sugar until combined. Add eggs, milk, and vanilla extract, whisking until smooth.
- In another bowl, mix self-raising flour, baking powder, ground cinnamon, ground ginger, and salt. Gradually fold the dry mixture into the wet ingredients without overmixing.
- Pour the batter into a greased and lined baking dish and bake in a preheated oven at 350°F (175°C) for 35-40 minutes.
- Chop walnuts and sprinkle them on top of the pudding during the last 5 minutes of baking.
- Let the pudding cool slightly before drizzling with warm honey syrup and serve with ice cream or whipped cream if desired.
