  • Gnocchi: 500 grams
  • Pancetta: 150 grams, diced
  • Eggs: 2 large
  • Parmesan cheese: 100 grams, grated
  • Black pepper: freshly ground, to taste
  • Garlic: 2 cloves, minced
  • Salt: to taste
  • Olive oil: 1 tablespoon (optional)
  • Fresh parsley: a handful, chopped (optional)
  • Guanciale: as a substitute for pancetta (optional)
  • Vegetables: such as peas or spinach (optional)

Instructions

  1. Cook the Gnocchi in a large pot of salted boiling water until they float, then drain and reserve some pasta water.
  2. In a large skillet over medium heat, cook the diced pancetta until crispy, about 5-7 minutes, then add minced garlic and sauté for 1-2 minutes.
  3. Add the cooked gnocchi to the skillet and toss to combine, removing from heat.
  4. In a mixing bowl, whisk together eggs, grated Parmesan, and black pepper, then quickly pour over the gnocchi, tossing to coat and creating a creamy sauce.
  5. Adjust the sauce consistency with reserved pasta water if needed, then serve garnished with extra Parmesan and parsley.
