Instructions
- Cook the Gnocchi in a large pot of salted boiling water until they float, then drain and reserve some pasta water.
- In a large skillet over medium heat, cook the diced pancetta until crispy, about 5-7 minutes, then add minced garlic and sauté for 1-2 minutes.
- Add the cooked gnocchi to the skillet and toss to combine, removing from heat.
- In a mixing bowl, whisk together eggs, grated Parmesan, and black pepper, then quickly pour over the gnocchi, tossing to coat and creating a creamy sauce.
- Adjust the sauce consistency with reserved pasta water if needed, then serve garnished with extra Parmesan and parsley.
